Jersey Fresh Blueberry Season Arrives

TRENTON — Agriculture Secretary Charles M. Kuperus announced June 19 the Jersey Fresh blueberry harvest has begun, making the healthy and delicious official state fruit of New Jersey available at local farm markets and supermarkets.

Blueberry Soup

Place one or more pints of blueberries in a sauce pan and cover with water. Heat to slow boil.
Sugar and cinnamon and or nutmeg to taste.
Mix corn starch with cold water enough to thicken the liquid in the pan.
Add small amount of hot liquid to the corn starch mixture. Stir and put all in pan and mix until desired thickness.
Mash mixture to keep fiber in soup.
Strain mixture to get pudding like soup.
If desired, spash with lemon. Garnish with dallop of yogurt and mint.
Serve hot or cold.
