I am looking forward the New Year as I am just finishing up putting in my new kitchen. With this, I hope to share new, healthy and fun recipes. In the meantime, here is a picture of the blogger starting things off right!

Just a neat little graphic I snapped off the cover of "edible Jersey" magazine. I wish graphic design of this nature still existed.
They did a whole article on the possibility of dairying in New Jersey in the their Fall 2008 issue. It is a beautiful publication, by the way.

What you will need:

2 firm, fresh filets of striped bass or similar fish of your choice..anything meaty...salmon even works good.
5-7 small potatoes
1 package frozen corn
1 or 2 fresh leeks or a handful of scallions. If you are using leeks, be sure to clean thoroughly.
1 clove garlic
1 jar of clam juice
1 good tablespoon of seafood seasoning of your choice
salt/pepper

The greater the distance food has to travel to the consumer, the greater the contribution to greeenhouse gas emissions and climate change. Buying local food encourages farmers to diversify their crops. Diversity in the fields decreases vulnerability to pests, extreme weather and disedase. In adddition, purchasing local food benefits your local enonomy.

I've always tried to follow this line of thinking and given that we live in such an area ripe for this type of thinking, we should really take full advantage of it.

I hope this veggie burger wrapped in warm flatbread with light garlicky greens does the trick! I'm amazed at how well I am eating using only a microwave and a toaster!

Veggie Burger Supreme

One Morningstar Veggie Burger
One cup spring mix tossed with light mayo and garlic salt
One Culinary Circle Garlic Naan (flatbread), toasted or grilled

One break from painting and staining.

One happy camper.

Roasted Vegetables with Grilled Bread

You can use any vegetable that would roast or grill well. For this particular recipe, I used the following:

Eggplant
Juicy jersey tomatoes
Orange and red peppers
Green and yellow zucchini
Sweet Vidalia onion
Garlic, thyme, rosemary

Rough chop all vegetables by hand or with food processor, (seed peppers)
Toss with olive oil, garlic, rosemary, thyme, and a teaspoon of kosher salt.
Spread on baking sheet and roast for 25 to 30 minutes, keeping an eye so as not to burn them

Here is a picture of a bluefish I imagined I caught.

Then I imagined it layered with kalamata olives, chunks of roma tomatoes, and thin slices of red onion with a generous shake of salt and pepper and a drizzle of extra virgin olive oil…
